What I like most about Sarek/Amanda is that they're never idealized; Sarek is very Vulcan, and the show never tries to downplay that side of him in order to make the relationship seem sweeter or more acceptable to human norms. For example, how, in "Journey to Babel" he chides Amanda for contradicting him in public - that was a moment where I positively went "ouch", yet despite the "ouch" moments they're still wonderful together.
Heh, I thought Scotty/Uhura was really far-fetched, but apparently not so much. :) I have to say in the reboot I don't quite see it, mostly because reboot!Scotty, while funny, didn't really feel like Scotty to me (too funny, and too much of an ego, to have a link with the original Scotty). My initial reaction to Spock/Uhura was also a doubtful one, but upon rewatch I did grow to like it.
